2 cups whole wheat flour
1 1/2 cup all purpose flour
1/2 cup old-fashioned rolled oat
2 Tbsp. brown sugar
2 tsp salt
1 tsp baking soda
1 tsp baking powder
3 Tbsp. Unsalted butter, cold
1 1/2 cup buttermilk
1 egg

1. Preheat oven to 350ºF. In a large bowl combine flours, oats, brown sugar, salt, baking soda, and baking powder. Grate the cold butter in to the dry ingredients and blend by hand until mixture resembles cornmeal.
2. In a small bowl, whisk together buttermilk, and the egg. Using your hands, mix wet and dry ingredients together and form a ball.
3. On lightly floured surface knead dough for 5 minutes until soft and elastic. Shape into round loaf 6 inches in diameter. Place on parchment paper lined banking sheet
4. Dust top of loat with flour and cut "X" into dough about half the dept of the loaf and to within 1 inch of the edge.
5. Bake 45-50 minutes. (Finished loaf should sound hollow when tapped. When you are ready to serve the sauce place equal amounts of the reduction and olive oil. Dip pieces of bread into the reduction and enjoy.

In a medium sized pot combine 1 3/4 cup Guinness and 1 3/4 cup brown sugar, simmer on low for approximately an hour. This mixture will reduce by at half if not more. Do not walk away while this is cooking, it will bubble up while cooking, and you need to stir it from time to time so it does not bubble over the stove. Let the sauce cool to room temperature before serving.
