3 large carrots
3 stalks of celery
1 white onion
3 cloves of garlic
1 pre-cooked sausage
2 large sweet potatoes
1 bunch of kale
1 (32 oz.) case of chicken stalk
1 (15 oz.) can of beans (chickpea, kidney, black, your choice!)
crushed red pepper flakes
white wine vinegar
Chili powder
Paprika

Directions:
Directions:
1. Chop the carrots, celery, and onion. Mince the garlic. Combine in a large pan and sauté. Transfer ingredients into a large soup pot. Add the chicken broth and bring to a boil, and let simmer. Season with vinegar, chili powder, paprika, and red pepper flakes. Taste and season to your preference.
2. Cut the sausage into disks, cut into half-moons. Sear in pan.
3. Peel and chop the sweet potatoes, add to pot. (cook for 15 mins until tender, not too soft)
4. Drain and rinse beans, add to pot. Add the sausage.
5. De-stem the Kale and add to pot. It may seem like a lot but add the Kale and let wilt down. You don’t have to add the whole bunch if you aren’t as big of a kale fan!
