1 Unbaked pie crust, 9 in.
2 T. butter
1/2 c. sugar
3 eggs, well beaten
3/8 t. ginger
3/8 t. ground cloves
3/8 t. cinnamon
1/2 t. salt
1/2 large can of Libby's pumpkin
1-1/2 c. milk (1% works fine)
Whipping cream

Melt butter; stir in sugar and eggs. Mix in the spices and salt.

Cook the pumpkin until hot in saucepan. In another pot, scald the milk. Combine all ingredients and pour into the unbaked pie shell. Bake for 10 min. at 400 degrees, then turn down to 325 degrees and bake 35 min. longer.

Makes 1 pie. For 2 pies, double ingredients and use 2 - 9 inch pie shells; bake 15 min. at 400 degrees, then turn to 325 degrees for 30 min. Filling should be set when done. Cool and top with beaten, sweetened whipping cream.
