2 T. butter
3/4 c. chopped onions
2 cloves garlic minced
2 T. flour
1 c. milk
1/8 tsp. salt
Dash of pepper
Dash of nutmeg
8 eggs beaten
1 12/ c. Spinach cooked and drained
2 oz. cheddar cheese
2 oz. Parmesan cheese

In a small pan melt butter, add onions and garlic sauté until softened. Add flour, quickly combine and stir in milk, stirring until smooth. Add seasonings and cook until thickened 5-10 minutes. Remove from heat and cool to lukewarm temperature. Transfer to medium bowl, add eggs, spinach and cheeses, mix together well.

Spray 9" pie plate, pour in egg mixture, bake until top is puffed and browned 40-45 minutes, or until knife inserted comes out clean.
