2 tablespoons margarine
½ cup chopped carrots or shredded
½ cup chopped celery
½ cup chopped onions
1- 10 oz. can tomatoes and green chilies
¼ cup sherry (optional)
3 - 15 oz. cans black beans undrained
¼ cup minced cilantro or 1T dried

Directions:
In a large pot melt margarine. Add carrots, celery and onions. Cook until tender (about 15 minutes). Add remaining ingredients. Heat to a boil. Reduce heat and simmer 20 minutes, stirring occasionally to break up tomatoes.

Garnish with sour cream.
