8 oz. cream cheese
1 cup peanut butter
3 Tbsp. softened butter
16 oz. powdered sugar
1 tsp. vanilla

1 cup whipping cream (whipped with 2 tbsp. sugar)

1 cup semi-sweet chocolate chips
3/4 cup whipping cream
1 tsp. vanilla

Directions:
Directions:
Make a crust of Oreo cookies, crushing cookies in a blender or food processor as you add enough melted butter so that the cookies will adhere. You will need about 1 1/2 cups of crushed cookies and about 4 tbsp. melted butter. Press into the bottom of a 9" pie pan and chill.

Combine in a mixer on medium speed the first 5 ingredients.

Fold in the whipped cream.

Pour into the pie pan with Oreo Cookie crust. Chill at least 3 hours.

Melt together the chocolate chips, 3/4 cup whipping cream and the vanilla.

Cool before spreading on top of pie.

This recipe came from the Buckhorn Inn's recipe book. This bed and breakfast is in the mountains of Gatlinburg, TN. I love peanut butter pie and this is one of my favorites.
