2 Tbsp. olive oil
3 1/2 lbs chicken parts
1/2 c. flour
3 cloves garlic, minced
1 c. finely chopped onion
1 green bell pepper, diced
32 oz. canned tomatoes
8 oz. can tomato paste
4 oz. mushrooms, sliced
4 stalks bok choy, chopped
1 tsp. salt
1 tsp. pepper
1 Tbsp. oregano
Parmesan cheese

Preheat oil in large skillet. Dredge chicken in flour. Brown chicken in skillet. Add remaining ingredients. Turn skillet to simmer. Cook covered, 1 hour. Serve with hot spaghetti or cooked rice and grated Parmesan cheese. 6 servings.
