6 soft tortillas
1 pound extra lean ground beef
One medium onion (halved lengthwise), cut into thin slices
1/2 cup chopped fresh cilantro
1 can (10 oz) diced tomatoes with green chiles, undrained
1 chipotle chili in adobo sauce finely chopped (from 7 oz can)
1 medium lime
2 medium avocados, pitted, peeled and coarsely chopped

1. Heat 10 inch skillet over medium high heat. Lightly spray both sides of one tortilla cooking spray. Cook tortillas in skillet 10 to 15 seconds per side, using tongs to flip, until tortilla firms up slightly and just begins to get brown spots. Place on plate; cover with towel to keep warm repeat with remaining tortillas.
2. In the same skillet, cook beef and half the onions over medium high heat 8 to 10 minutes, stirring frequently, until beef is thoroughly cooked. Stir in 1/4 cup of the cilantro, tomatoes, and chili. Heat to boiling; reduce heat. Simmer about 5 minutes, stirring occasionally.
3. Meanwhile, in medium bowl, grate lemon zest; squeeze juice from lime into bowl. Add avocados, the remaining onion and 1/4 cup cilantro to lime juice mixture; toss to combine.
4. Using slotted spoon, fill tortillas with ground mixture; top avocado salsa .
