3 leeks
1/3 c. butter
1 clove garlic, minced
4 medium potatoes, peeled & cubed (sweet potatoes are best)
8 c. chicken stock
1 c. light cream
Salt & group pepper
3 Tbsp. minced fresh parsley or chives (1 Tbsp. dried)

Directions:
Directions:
1. Cut leeks lengthway into white part. Spread apart and wash under cold running water. Slice thinly by hand or in food processor.
2. In large pot, fry leeks & garlic in butter until tender. Add potatoes and chicken stock; simmer, partially covered for 30 minutes or until vegetables are tender.
3. Purée in blender. Just before serving, reheat soup, add cream and add salt/pepper to taste. Sprinkle with parsley.
