6 medium leeks
1/3 c. butter
1 clove garlic, minced
4 medium potatoes, peeled & cubed (sweet potatoes are best)
8 cups chicken stock
1 c. light cream
Salt & group pepper
3 Tbsp. fresh parsley or chives (1 Tbsp. dried)

Directions:
Directions:
1. Cut leeks lengthwise halfway into white part. Spread apart and wash until cold running water. Slice thinly by hand or in food processor.
2. Fry leeks and garlic in butter in saucepan.
3. Add potatoes and chicken stock and simmer, partially covered, for 30 minutes or until vegetables are tender. Purée in blender or food processor.
4. Just before serving, reheat soup; add cream and salt and pepper to taste. Sprinkle with parsley.
