2 pints grape tomatoes, red or mixed colours
3/4 c. red onions, small-diced
2 Tbsp. balsamic vinegar
3 Tbsp. olive oil
1 1/2 tsp. salt
1/2 tsp. ground black pepper
2 Tbsp. fresh basil leaves, chopped
2 Tbsp. fresh parsley leaves, chopped
3/4 lbs. feta cheese (or less)

Directions:
Directions:
1. Cut tomatoes in half and place them in a large bowl.
2. Add onion, vinegar, olive oil, salt, pepper, basil, parsley and toss well.
3. Dice feta into 1/2 to 3/4-inch cubes crumbling it as little as possible. Gently fold into the salad and serve at room temperature.
