1 c. bulgur wheat
2 c. water
1/2 c. olive oil
1 bunch green onions
1/2 c. lemon juice
1 1/2 c. fresh parsley
1/2 c. mint leaves
1 tsp. salt
1 sliced tomato or 1/2 c. salsa

Directions:
Directions:
1. Soak bulgur in water until soft; about 3 hours. (I sometimes let it sit overnight with plastic covering.)
2. Wash parsley, mint and green onion and chop finely. Chop tomato into small pieces.
3. Drain bulgur and combine with parsley, mint, onion and tomato. Stir in olive oil, lemon juice and salt. Serve.
