BASTING: 3/4 to 1 full pound of softened butter 1 Tbsp. dried parsley 1 tsp. dried thyme Plenty of salt and pepper
BOTTOM LAYER: 2 c. carrot chunks (or baby carrots) 2 onions, quartered 1 c. chicken broth
INSIDE: 3-4 apples, quartered 3 onions (additional), quartered

Directions:1. Take frozen turkey out of the freezer the night before and place in a sink of cold water. (You may have to get up in the night to remove giblets in the cavity so that the inside thaws completely.) 2. Take out a pound of butter so it can soften. 3. Calculate the number of hours the turkey will need to cook -- one hour plus one 1/2-hour for every pound of turkey. Ex. if turkey is seventeen pounds, the total cooking time would be 9.5 hours (1 + 8.5). 4. Preheat oven to 400°F before beginning basting. 5. Prepare basting by combining softened butter, parsley, thyme, salt and pepper with a fork. 6. Lift the skin on the back of the turkey and push the entire butter mixture up inside with a spatula. Spread the mixture over the turkey (between skin and meat) with your (clean) hands. 7. Place turkey in roaster on bed of carrots, onions & chicken broth. 8. Stuff turkey cavity with apple quarters and onion quarters. 9. Cover. Cook at 400°F for one hour (this seals in the moisture). 10. Turn heat down to 300°F and cook for remaining time calculated. |
