2 T vegetable oil
2 medium green peppers, chopped
1 medium red bell pepper, chopped
4 carrots, peeled and chopped
1 medium onion, chopped
2 garlic cloves, minced
3 skinless, boneless chicken breasts halves, cut into thin strips
3 large tomatoes (or 2 cans Ro-Tel tomatoes, chopped)
1-1/2 TSP ground cumin
1-1/2 cups frozen corn kernels (or 1 can)
6 cups of chicken broth (4 cans)
Juice of 1 lime
1 1/3 c (6 oz) shredded Monterrey Jack cheese

Directions:
In a large pot, heat oil and add first 7 ingredients and cook, stirring often until onion is soft and chicken in no longer pink. Add tomatoes, reduce heat and cook 5 minutes stirring often. Add cumin, corn and chicken broth. Heat to boiling, reduce heat to low and simmer uncovered 10 minutes. Stir in lime juice

Put fritos and cheese in bottom of soup bowl and ladle soup on top.
