Cookies:
3 cups brown sugar
2 eggs
1 tsp vanilla
1 cup crisco shortening
1 cup milk
3 tsp baking soda
7 cups flour
3 tsp cream of tartar
dash salt

Filling
:
1 box raisins
3 cups water
Sugar to taste
Make a thickening with flour and water, about 3 TBSP each

or:
2 packages California apricots
Add water to cover
after they are plump add sugar to taste and put in blender or food processer

Cream 1 cup shortening and 3 cups brown sugar
Add 2 eggs and 1 tsp vanilla
Sift together 7 cups of flour, 3 tsp baking soda, 3 tsp cream of tartar, dash salt
Add dry ingredients alternately with 1 cup milk
Chill 1/2 hour before rolling.
Roll out about 1/4 inch thick and cut with mouth of glass

Bake 400 degrees 10-15 minutes, check often until the tops no longer look wet and are brown.

Filling:

Raisin
1 box raisins,3 cups water
Bring to boil Add mixture of 3 TBSP flour and 3 TBSP cold water to thicken
If not thick enough add more flour and water until not runny

Apricot
Cover 1 package dried apricots with water and boil until plump
Add sugar to taste, blend

This dough gets very thick and when adding dry ingredients I suggest you use dough hooks. If mixer labors too much you may need to finish by hand. The dough can be stored in refrigerator 1- 1 1/2 weeks. You must cover unused dough tightly with saran wrap and lay a moist cloth over the saran wrap to keep the dough moist.
