Ingredients: Dough 2 oz. yeast 1 c. sugar 10 c. flour 1 ½ c. (3 sticks) butter 4 yolks 2 eggs 1 ½ c. warm milk
Filling: 3 pkg. 8-oz. hard cream cheese 2 lbs. farmer’s cheese 5 tbsp. vanilla sugar 1 egg 1 yolk 1 ½ c. sugar
Crumb Topping ½ c (1stick) butter 1 c flour 1 c. sugar 1 egg for brushing

Directions: Place yeast, sugar and 1 cup warm water into the bowl of an electric mixer. Let set for 5 min. Add remaining dough ingredients, alternating wet and dry and mix very well for at least 5 full min. Cover and let rise for 1 hour. Meanwhile, combine all ingredients for the filling into a large bowl and blend very well using either and immersion blender or just the back of a fork. Mix ingredients for topping as well by simply crumbling ingredients with fingers to create a crumbly consistency. Preheat oven to 350º. Once dough has risen take challah and divide the dough into 3 or 4 parts. Roll each piece of dough out to about ¼ inch thick and smear with filling. Use up all the filling amongst the cakes. Roll each piece of dough up in jellyroll fashion, rolling gently so as not to squeeze out all the filling. Bend it to fit into a round pan shaping it like a spiral or knotting it. Brush the top of each babka with beaten egg and sprinkle generously with topping. Bake 45-50 min. |
