Ingredients: Chocolate Batter 2 ½ C Sugar ¾ C Cocoa 1 ½ Tbsp Baking Soda 1 ¾ c flour 1 ½ Tsp baking powder Pinch salt 2 eggs ½ c oil 2 tsp vanilla extract 1 c coffee whitener 1 c boiling water
Chocolate cream 4 eggs 4 sticks margarine 16 oz baking chocolate ½ c water 1 1/3 c sugar 1 T Coffee ½ tsp rum
White batter 2 ¼ C flour 3 tsp baking powder ¾ c OJ 1 ½ tsp lemon extract 1 ½ c sugar 4 eggs ¾ c oil
White cream 3 sticks margarine 2 tsp vanilla sugar Juice of 1 ½ lemons (4 ½ Tbsp) 1 ½ c confection sugar 3 egg yolks

Directions:Preheat oven to 350º
Choc Batter Combine all dry ing in a bowl. Mix all wet ing except water, in a mixer. Add dry ing, then add water. Place brown tall muffin paper cups into a 9 x 13 baking pan. Pour batter inot cups ½ full. Bake for 30 minutes
Chocolate Cream: Beat eggs and margarine until fluffy. Combine rest of ing in a double boiler and stir until melted. Add mixture to eggs and mix well. Refrigerate
White batter Mix all ing. Place white tall muffin paper cups into a 9x13 baking pan. Pur batter into cups ½ full. Bake for 30 minutes
White cream Beat all ingredients. Refrigerate
Fill a piping bag with cream. Pipe cream with standard size tip all around muffins coming up in the center with a swirl. Use chocolate cream for chocolate muffins and white cream for white muffins. |
