1/4 cup butter
2 tablespoons minced sweet onion
2 teaspoons minced garlic
2 large egg yolks
1 cup heavy (whipping) cream
1 1/2 cups freshly grated asiago cheese
1 teaspoon chopped fresh basil
Sea salt
Freshly ground pepper

Directions:

1. In a large saucepan over medium heat, melt the butter.

2. Saute the onion and garlic until softened, about 3 minutes.

3. Whisk in the egg yolks and cream.

4. Bring the sauce to a boil, and reduce the heat to low so that it simmers and thickens, about 5 minutes.

5. Whisk in the cheese and basil, and simmer for 2 minutes.

6. Season the sauce with salt and pepper, and serve over chicken or vegetables.
