1 avocado peeled and pitted
1/4 cup cocoa powder
1/4 cup egg white protein powder
1/4 cup water
3/4 cup water
3/4 teaspoon stevia, divided
1/4 teaspoon ground cinnamon
Pinch sea salt
1 1/2 cups heavy (whipping) cream

1. In a blender, blend the avocado, cocoa powder, egg white protein powder, water, 1/2 teaspoon of the stevia, cinnamon, and salt until the pudding is smooth and thick, adding more water as needed to adjust the texture. Set aside.

2. In a large bowl, whisk the heavy cream and the remaining 1/4 teaspoon until firm peaks form, about 5 minutes.

3. Set up 4 parfait or regular glasses.

4. Spook 1 tablespoon of chocolate pudding into each of the glasses, and top each with 2 tablespoons of whipped cream. Repeat the layering until all the pudding is used up, and you end with whipped cream on top.

5. Refrigerate the parfaits until you want to serve them.
