2 cups sifted flour
2 tsp baking powder
1 1/2 tsp baking soda
1 1/2 tsp salt
2 tsp cinnamon
2 cups sugar
1 1/2 cups oil
4 eggs
2 cups finely grated carrots
1 (8 1/2 oz) can crushed drained pineapple
1/2 cup chopped nuts
1 can (3 1/2 oz) coconut

Cream Cheese Frosting
1 stick butter or margarine, room temp
8 oz cream cheese, room temp
1 tsp vanilla
1 lb powdered sugar

Directions:
Directions:

* Combine flour, baking powder, baking soda, salt, cinnamon, sugar, oil & eggs. Beat on medium speed for 1 minute.

* Add carrots, pineapple, nuts & coconut. Thoroughly blend.

* Pour into 3 greased floured (9") round layer cake pans. (I use wax paper in the bottom of pan instead of greasing & flouring)~Beth

* Bake @ 350ºF for 35-40 minutes.

*Cool on racks for 10 minutes. Turn out on rack & cool completely.

Frosting
* Cream butter or margarine, cream cheese & vanilla.

* Gradually add powdered sugar until smooth & creamy.

*Ice cake & enjoy!

Vic entered this cake in a Father's Day Bake Off at our church. He won 1st prize. The next year someone brought Vic's recipe and won 1st prize too. Yay Vic!~Beth
