Ingredients: 2 lbs. potatoes (~8 large) 2 Tbsp. butter 2 Tbsp. milk Salt and ground pepper 1 Tbsp. oil 1 large onion, finely chopped 2 lbs. ground beef 3-4 c. frozen mixed vegetables (carrots, peas, beans & corn) 2 Tbsp. flour 1 c. vegetable stock 1/4 c. Worcestershire sauce

Directions:1. Peel potatoes and cut into chunks. Bring to boil then turn to simmer and cook until tender (about 1/2 hour). Drain potatoes well. Return to low heat on stove and stir to evaporate excess water. Add butter, milk, salt and pepper and mash until smooth. 2. Preheat oven to 350°F. Bring frozen vegetables to boil and cook until just tender. Drain. Add salt and butter if desired when vegetables are cooked and drained. 3. Meanwhile, heat oil in a large frying pan and add onions. Cook until onions begin to colour. Add ground beef and fry until meat is browned and cooked. Sprinkle flour over browned ground beef and onion mixture. Stir and cook for 1 min. Slowly add the stock, stirring constantly. Add Worcestershire sauce. Bring to boil and cook for 2-3 minutes or until gravy thickens. Season to taste with salt and pepper. 4. Layer meat mixture on bottom of 9x13" pan. Then layer cooked vegetables. Finally, add mashed potatoes to the top. Even out potatoes and make diagonal lines with a fork. Bake for 40-50 minutes or until the potatoes are golden. |
