3 hard boiled eggs
6 oz. sausage meat
Beaten egg
4 oz. dried breadcrumbs

Directions:
Directions:
To boil eggs, cover with cold water, bring to boil, then turn eggs on to other sides and boil 10 minutes. Remove and put in cold water till cool, then shell carefully. Divide sausage meat into three equal parts. Dry eggs carefully, dip into seasoned flour, and mold a portion of sausage meat round each egg till all evenly covered. Brush with beaten egg, dip in dried breadcrumbs, and fry in very hot deep fat until golden brown. Drain on paper. When cold, halve crosswise.
