Black Bean Soup

1 lb black beans
1 c coffee
1 green pepper
1 onion
1 jalapeno
clove garlic
1 lb Polish sausage, sliced
1 bay leave
1 t cumin
S & P to taste

Directions:
Directions:
Soak beans overnight, rinse. Add next five ingredients to beans and cover with water. Boil until tender, 1 – 2 hours. Remove peppers, onion and garlic.
Add the sausage, bay leaf cumin and salt and pepper. Cook an additional hour on low.

Serve with minced onion marinated in red wine vinegar and olive oil, over cooked rice.
