Salmon Burgers and Aioli Recipe

2 skinless salmon fillets,finely chopped
2 potato buns
juice of 1/4 lemon
2 cloves of garlic, minced
1/2 shallot, minced
1 bunch of oregano, finely chopped
arugula leavesl
2 tbsp mayonnaise
1 tbsp butter
1/4 c. panko breadcrumbs
olive oil
salt and pepper to taste

Directions:
In a medium bowl, add the salmon, breadcrumbs. oregano. shallot, half the garlic and a drizzle of olive oil. Season with salt and pepper. Gently mix to combine. Form into two 1/2 inch burgers. Heat 2 tsp olive oil in medium pan. Add the burgers and cook 3 to 4 minutes per side or until browned and cooked through. Transfer to a paper towel-lined plate. Wipe out pan.

While the burgers cook, in a small bowl, combine the mayonnaise, remaining garlic, lemon juice and a drizzle of olive oil. Stir to combine and season with salt and pepper to taste.

In the pan used to cook the burgers, melt the butter. Add the buns, cut side down, and toast 30 seconds to 1 minute , or until lightly browned. Remove the buns from the pan. Spread a layer of the aioli onto the cut sides of the toasted buns. Place the burgers onto each bun bottom. Top with arugula and the bun tops.
