2 oz. yeast
˝ Cup warm water
˝ Cup Sugar
2 eggs
2 yolks
1 Cup margarine (2 sticks)
1 Cup apple juice
˝ Cup warm water
1 tsp. salt
8 Cups flour

Filling
1 Cup confectioner’s sugar
1 Cup brown sugar
4 heaping tsp. cinnamon
˝ tsp. ground all spice
1 Cup chopped pecans (optional)
Oil for spreading

Carmel Glaze
˝ Cup margarine (1stick)
1 Cup brown sugar
2 Tbsp. corn syrup or karo syrup
1 tsp. pure vanilla extract

Place yeast, sugar and ˝ cup warm water into the bowl of mixer and let sit for 5 min. Add remaining ingredients alternating wet and dry. Mix well. Let rise, covered, for 45 minutes to an hour.
Meanwhile, mix ingredients for filling and set aside. Melt the ingredients for the caramel glaze in a heavy saucepan. Cut a piece of parchment paper to fit into a 2”x10” round spring form pan. Place the cut paper into the bottom of the pan and pour the melted syrup on top of it. Spread evenly.
When the dough has risen divide into 2 parts. Roll each piece into a flat rectangle, about 1/8” thick. Smear generously with oil and sprinkle half the filling, evenly distributing the pecans and raisins. Note: Always add more filling than you think you need.
Roll the dough up jellyroll style and cut 2 inch slices. Place slices swirl side up into the caramel glaze, starting on the outer edges and working your way to the center. Bake 40 minutes and remove from oven.
When it has cooled about 5 minutes, flip the pan over so that the caramel glaze is now on top. The caramel will seep down into the cake, so make sure the dish you flip the cake on is big enough.
