Avocado Tacos

Serves 4-6
Ingredients for taco
3 avocados, peeled and thinly sliced
12 corn tortillas (e.g., La Tortilla Factory Hand Made Style Corn Tortillas), pre-warmed
¾ cup white onion, finely diced
½ cup chopped cilantro


Homemade Tomatillo Salsa

4 pasilla chiles
½ teaspoon coarse salt
2 garlic cloves
10 tomatillos, boiled in salted water until softened, approximately 5 minutes

Aromatic Latin Chicken

This recipe creates flavor from a spice rub the chicken sits in, as well as aromatics, like garlic, jalapeno and onion that are added at the end of the sautéing process. This recipe works well with chicken breast. In a hurry? Ground turkey also works in place of chicken breast.

Makes 4 servings
1 pound boneless skinless chicken breast, cut into 1-inch cubes; alternatively, a 20 ounce-package of unseasoned ground turkey (93/7 lean/fat ratio)
2-3 teaspoons extra-virgin olive oil

Rub Mixture:
¼ teaspoon cumin
¼ teaspoon chile flakes, or to taste
½ teaspoon oregano
½ teaspoon paprika
½ teaspoon coarse salt
¼ teaspoon black pepper, or to taste
Pinch ground cloves
Pinch cinnamon

Aromatics:
2-3 garlic cloves, minced
¼ cup finely chopped onion
1 chopped jalapeno pepper, seeds and ribs removed

Peel avocado, and cut into slices.
Place 3 slices of avocado on each pre-warmed tortilla
Garnish with onion, cilantro and green salsa.

Homemade Tomatillo Salsa


Makes 2 cups

Turn stove top gas burner onto medium-high. Place two chiles at a time onto burner head turning with tongs for even roasting. The chiles will snap and char as they cook. Cook until they are softened. Remove from heat, and cover chiles with a cloth towel to allow chiles to steam. This will help you remove the skin.
Alternatively, place chiles on a baking sheet in a preheated oven (400⁰ F) for about 10 minutes, until chiles are soft when pierce with a fork. Cover chiles with a cloth towel to allow them to steam. When chiles have cooled, remove the skin, core and remove seeds.
Transfer chiles and salt to a food processor, and process into a puree.
Place tomatillos in boiling, salted water. Allow to gently boil for approximately 5 minutes, or until soft.
Remove tomatillos from water and allow to cool.
Remove husks, and core from tomatillos.
Add the garlic and tomatillos to the chile mixture, and puree until smooth.
Store in refrigerator for up to two weeks.

Aromatic Latin Chicken
Place chicken pieces in a bowl. In a separate small bowl, combine all eight spices and mix well. Sprinkle seasonings over chicken and toss with hands to coat chicken.
Store in a zip-lock baggie. Refrigerate at least 1 hour, or up to overnight.
Heat oil over medium heat in a nonstick skillet. Saute chicken, onion, garlic and jalapeno for 6-8 minutes, or until chicken is just cooked through.
Serve as a taco with added garnishes (sour cream, guacamole) or alongside Spanish rice with a salad, such as curtido, a Salvadoran pickled slaw of cabbage, onion, carrots, oregano and lime juice.
Ground Turkey Alternative
Heat oil in non-stick pan and add 8 spices to the oil. When oil is hot, add the ground turkey, stirring occasionally to cook through.
Serve as a taco with added garnishes (sour cream, guacamole) or alongside Spanish rice and and salad, such as curtido, a Salvadoran slaw of cabbage, onion, carrots and lime juice.

These street tacos are so simple and satisfying, you may want to add them to your comfort food list! Flavor up the taste with a drizzle of lime juice, a sprinkle of onions and cilantro, and a dollop of homemade salsa, or your favorite store brand salsa as a meal assist.
