2 cups flour
1/2 cup sugar
1 cube butter

Directions:

Sift flour and sugar twice. Cut in butter with a fork until the size of peas. Knead with fingers until dough forms a ball, then press into 8x8 glass baking dish.l Score with fork. Bake at 300º for 1 hour.

Cut into finger-size pieces and cool.

Bess was grandpa Jack's mother. She and her aunt Kate were born in Scotland and made this shortbread recipe for the family every Christmas. This was originally Aunt Kate's recipe, but after she passed, Grandma Bess was in charge. Now mom is in charge. Better practice!
