1-2 Tbsp. oil (I use grape seed oil)
1/2 onion, chopped
3 cloves garlic, minced
1/4 tsp. ground ginger
1/2 tsp. turmeric
2-3 tsp. curry powder, to taste
1 c. brown rice
3/4 c. dried lentils
4 c. water
2 vegetable cubes
Salt to taste
1/2 c. raisins
1/4 c. sunflower seeds
1 large, tart apple or 2 medium, diced

GARNISH:
1 c. plain, low-fat yogurt
1/4 c. raisins, optional

Directions:
Directions:
1. Heat 1 Tbsp oil in heavy bottomed soup pot and sauté the onion with 1 clove garlic until it begins to turn translucent.
2. Add ginger, turmeric and curry powder and sauté for a few minutes longer.
3. Add more oil, if necessary and the rice and sauté for two minutes. Add the lentils, water (be careful with steam released), bouillon cubes, remaining garlic, raisins and sunflower seeds and bring to a boil. Stir.
4. Cover, reduce the heat to low and simmer for 25 mins. Add the apples and simmer, covered for another 10 to 15 mins. or until the water is absorbed.
5. Serve topped with yogurt and raisins, if desired.
