Meatballs (see recipe in this book)
1 1/2 c. boiling water
3 (1 c.) beef stock cubes
1 14-oz can pineapple chunks
2 Tbsp. cornstarch
1/2 c. brown sugar
1/2 c. white vinegar
1/4 c. ketchup
3/4 c. small sweet gherkins, optional
2 green peppers (or 1 green, 1 red)
2 carrots, diagonally sliced

Directions:

1. Boil water in kettle. Drain pineapple juice into cooking pot. Add cornstarch and brown sugar, mixing well with a whisk.
2. Add beef cubes dissolved in boiling water along with vinegar and ketchup.
3. Cook, stirring frequently until thickened and bubbly. Reduce heat. Gently stir in meatballs, pineapple chunks and remaining ingredients. Heat through. Serve with rice.
