3 Tbsp. vegetable oil
3 Tbsp. all purpose flour
½ c. yellow onion, minced
2 Tbsp. shallot, minced
2 Tbsp. celery, minced
1 Tbsp. garlic, minced
½ tsp. cayenne
1 c. fish stock or water
2 bay leaves
2 c. milk
2 c. heavy cream
1 tsp. Cajun seasoning of your choice
½ lb. blue crab meat, picked through for shells

Directions:
Directions:
Heat oil in large Dutch oven over medium heat. Add flour a tablespoon at a time, stirring constantly with a wooden spoon until blended. Continue stirring to make a light brown roux.
Add veggies, garlic, cayenne and cook, stirring constantly, until the onions soften. Stir in stock. Add bay leaves and bring to a boil.
Add the milk, cream and Cajun seasoning.
Reduce the heat to medium low. Simmer, uncovered, for 30 minutes.
Remove bay leaves. Stir in crab just before serving, and warm for 5 minutes. Add salt and pepper to taste.
**This recipe doubles well.
