Two 4 ounce chicken breasts
Marinade
2 T chopped garlic
1/4 cup olive oil
1 tsp red pepper flakes
1/4 tsp salt
1/4 tsp pepper

Pepper and onion medley
1 green pepper, cut into thin strips
1 red pepper, cut into thin strips
1 yellow onion, cut into thin strips
1/4 cup olive oil
1tsp chopped garlic
Salt and pepper to taste

2T olive oil
2 c white rice or mashed potatoes
2 slices American cheese
1/2 c shredded mozzarella cheese
Directions:
Directions:
Trim fat and pound chicken breast until thin
Combine marinade ingredients. Put chicken in the marinade and refrigerate for 3 hours
Saute the peppers and onion in olive oil for 2 min. Then add garlic and saute for 2 min more
Season with salt and pepper
Saute chicken in oil over medium heat
Serve over rice or potatoes and cover with pepper and onion medley. Top with cheeses
