2 cups flour
1 cup sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
2 tsp orange rind, grated
1 1/2 tsp nutmeg
1 tsp cinnamon
1/2 cup shortening
1 tbs vanilla
1/2 tsp ginger
3/4 cup orange juice
2 eggs - slightly beaten
1 1/2 cups each of cranberries and chopped walnuts

In medium bowl mix flour, sugar, baking powder, soda, rind, nutmeg, cinnamon, and ginger. Cut in shortening. Stir in juice, vanilla, and eggs. Fold in cranberries and walnuts. Spoon into 18 well-greased or paper-lined 2 1/2" muffin cups. Bake in pre-heated 350 oven for 25 minutes or until golden. Serve hot.
