6 oz. fresh organic raspberries
2 lbs. organic peaches, pitted and thinly sliced
3/4 c. sugar
1 tbsp. quick-cooking tapioca
1 c. flour
2 tsp. baking powder
1/4 tsp. salt
1/4 c. + 1 tbsp. sugar, divided
2 tbsp. butter
3/4 c. low-fat buttermilk
Fat-free vanilla frozen yogurt, optional

In a large bowl, gently toss raspberries, peaches, 3/4 cup sugar and tapioca. Pour into an 8x8 inch square or 9 inch round baking dish coated with cooking spray.
In a small bowl, whisk flour, baking powder, salt, and 1/4 cup sugar. Cut butter into small pieces and, using your fingertips, rub butter pieces into flour mixture until it resembles a coarse meal. Stir in buttermilk just until combined. With a spoon, dot large pieces of dough over the fruit mixture. Sprinkle remaining tablespoon of sugar over the top.
Preheat oven to 375 degrees and bake for 45 minutes or until crust is golden brown and fruit is tender and bubbly. Tent loosely with foil if crust is getting too brown but fruit isn't tender. Serve warm with frozen yogurt (optional). Refrigerate any leftovers.
