3 lbs. chicken parts
6 c. water
2 stalks celery, chopped
1-2 jalepenos, finely chopped
1 Tbsp. dried parsley or cilantro
1 Tbsp. crushed red pepper
1 bay leaf
1/2 tsp. black pepper
3 c. Bisquick baking mix
1 c. milk

In a large, deep pot (not a slow cooker), place the chicken, water, celery, jalapenos, and spices. Cover, bring to a boil, then reduce to simmer for one hour. Mix Bisquick and milk and drop by large spoonfuls onto meat. Simmer uncovered 10 minutes; cover and simmer 10 more minutes. Serves 6.

Growing up, about once a month our family would have Sunday dinner at my Grandma's house (my father's mother). One of my favorite meals that she made was chicken and dumplings. I asked my mother once why she never made chicken and dumplings, since I believed she could make anything. She said that it was Grandma's dish. I didn't understand as a child but now know that she was leaving it for Grandma to make something special that we couldn't get at home. My version of chicken and dumplings is a spicy one, but it could easily be made tamer by eliminating the jalapenos and red pepper.
