1 pie crust
4 slices of bacon
3/4 lb. imitation crab meat
3 eggs, beaten slightly
1 1/2 c. milk
1 tsp. dry parsley
1/2 tsp. nutmeg
1/2 tsp. grated lemon peel
1/2 tsp. Worcestershire sauce
1/4 tsp. thyme
1/4 tsp. onion salt
1/4 tsp. pepper
2 c. cubed Velveeta cheese
2 Tbsp. milk

Line a 9-inch pie pan with pastry. Cook bacon until crisp; when cool, crumble and press into bottom and sides of the pastry. Arrange flaked crab meat in bottom of shell. Combine eggs with 1 1/2 cups of milk and seasonings. Pour over crab. Bake in 450º oven for 10 minutes; reduce to 350º and bake 45 minutes longer or until set. Make sauce by melting cheese mixed with 2 Tbsp. milk. Cut pie in wedges and serve each with a ladle of cheese sauce over it. Serves 6-8.

One of my favorite types of seafood is crab and, while I do know that imitation crab is not the same, sometimes in dishes such as this, imitation is a cheap, but adequate, substitute. This quiche may be used for a brunch, luncheon or dinner entrée.
