Dry Ingredients:
1 1/3 cup flour (I use 2/3 white, 1/3 spelt and 1/3 quinoa flour; can use white flour)
1/2 cup white sugar
1/2 cup brown sugar
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
Wet ingredients:
2/3 cup oil (I used olive oil)
2 eggs
1 tsp. vanilla
1 cup grated carrot
1/2 cup crushed pineapple
1/2 cup nuts (optional)

Icing:
1 pkg. (3 oz) cream cheese cut in 4 pieces and softened
2 tbsp. soft butter
2 to 3 teaspoons lemon juice
1 1/2 cups confection (icing) sugar
1/4 tsp. mace or nutmeg

Directions:
Directions:
For cake:
Mix dry ingredients and then wet ingredients.
Add wet ingredients to dry ingredients.
Put in 9" X 9" pan.
Bake at 350º for 35 minutes.

For icing:
Cream cheese and butter and lemon juice.
Add sugar and mace.
Makes 1 cup.
Apply icing after cake is cooled and store in refrigerator.

This is definitely not health food. But it is good and I get rave reviews each Easter when I make my bunny cake. Cake is really moist and the icing is yummy...
