1 cup bulgur
2 cup boiling water
1/2 cup olive oil
2 1/2 - 3 cup corn kernels
1 cup scallions, chopped
1 cup cut parsley leaves
1/2 cup lemon juice; zest to taste
1 cup red bell pepper, diced
1 cup cut mint leaves
salt and pepper to taste

Combine blugur and boiling water. Let ingredients rest for one hour, drain in a sieve and combine with remaining ingredients and chill overnight. Adjust seasonings. Experiment with other vegetables
