2 cups flour
Dash of salt
1 egg
1 tbsp. oil
1 cup water
700g. cheddar cheese, grated
10 lbs. cooked, drained and mashed potatoes

onions and bacon, if desired

Directions:
Directions:
Mix 1 egg, 1 tbsp. oil -fill up cup with water to measure 1 cup. Add to flour. Knead. Place in damp cloth until it's rolled out.

Place grated cheese on top of potatoes and cover. The heat melt the cheese. Mix together.

Cook onions and bacon if desired, to layer over a layer of perogies.

Bring water to a boil and drop a few at a time. When they float to the top, they are done. Layer them in a large roasting pan.
