2 cups flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
3/4 cup margarine
1 cup firmly packed brown sugar
2 eggs
1/4 cup milk
1 tsp. vanilla
1 tsp. grated lemon rind
1 cup shredded coconut
Jam of your choice

Directions:
Directions:
Combine flour, baking powder, soda and salt together and set aside.
Cream margarine with brown sugar until light. Add eggs one at a time, beating well after each addition. Blend in milk, vanilla and lemon rind. Stir in dry ingredients. Add coconut and mix well.

Drop by tsp. onto greased cookie sheet. Make an indentation in the center of the cookie and fill with jam. Top with 1/2 tsp. dough.

Bake at 375ºF for 10-12 minutes.

Remove from sheets and cool on racks.
