1 lb. dates, cut up
1 c. sugar
1 1/3 c. water

CRUMB LAYERS:
2 1/2 c. all-purpose flour
3 c. rolled oats
1 1/2 c. brown sugar, packed
2 tsp. baking soda
1 tsp. salt
2 c. butter or margarine

Directions:
1. Preheat oven to 350°F. In a saucepan combine dates, sugar and water. Bring to boil and allow to simmer until mushy. If mixture becomes too dry before dates have softened enough, add more water. If you find you have too much water, don't worry. Just keep simmering until some has boiled away.
2. Meanwhile, combine flour, oats, sugar, soda and salt in a large bowl. Cut the butter into the mixture with pastry blender until crumbly. Press a large 1/2 -- almost 2/3'rds -- into a greased 9x13" pan.
3. Spread the date mixture over the layer of crumbs. Sprinkle remaining crumbs over the top. Press down with your hand.
4. Bake for 30 minutes until a rich golden brown colour.

If you are in a great hurry and your butter is hard as a rock, you can still make this using melted butter. It will be more difficult to spread the top crumbs.
