1/2 cup graham cracker crumbs
1 1/2 tbsp. sugar
1/4 tsp. ground cinnamon
5 eggs- separated
1 cup sugar
2 (8oz.)pkg. cream cheese, softened
1 cup sour cream
2 tbsp. all-purpose flour
1 tsp. vanilla
Cherry glaze or Cherry/Blueberry pie filling

Preheat oven 275º
Butter springform pan 9x13".
Mix 1 tbsp. sugar, crumbs, cinnamon, and nutmeg.
Dust bottom and sides of pan.
Beat egg yolk in large bowl until thick & lemon color. Gradually beat in 1 cup sugar. Beat in cream cheese until smooth. Beat in sour cream, flour, vanilla until smooth.
Beat egg whites until stiff but not dry. Gently fold into cream cheese mixture. Pour in pan.
Bake 1 hr. 10 minutes. Turn off oven and leave cake in oven 1 hour. Cool in pan on a wire rack 15 minutes. Refrigerate about 3 hrs. or until chilled.

Spread cherry/blueberry glaze over top of cake. Refrigerate until glaze is set. Remove cake from pan just before serving.
