1 14 oz. can light coconut milk
1 15 oz. can low sodium chicken broth
4 tsp ginger paste
3 cloves minced garlic
1 15 oz can tomato puree
4 6 oz filets of salmon
salt
pepper
4 T.thinly sliced green onion

Directions:
Directions:
Combine milk, broth, garlic and ginger in a large sauté pan. Bring to boil and reduce to simmer for about 20 minutes until mixture thickens slightly and is reduced by about half. Add tomatoes. Season with salt and pepper. Simmer on low for an additional 30 minutes.
Season salmon with salt and pepper. Add to sauce and simmer, covered until fork tender (about 10 minutes). Divide into four serving dishes and sprinkle each with 1 T. sliced green onions. Serve with sticky rice.

Chef's note: To make a chunkier sauce, sauté diced tomatoes, onion and or zucchini in olive oil in the sauce pan before adding the milk and broth.
