Ingredients:
Ingredients:
4 ears fresh corn, shucked and cleaned
4 strips of thick cut bacon
2 tablespoons butter
1/2 cup red bell pepper, diced
1/4 cup heavy whipping cream
salt and pepper to taste

Directions:
Directions:
Cut the corn off the cob, trying to stay close to the cob, then scrape down the cob with a butter knife to get the milk from the cob. Cut up the bacon and fry in a medium skillet until crisp, remove bacon and leave 3 tablespoons of bacon grease in pan, turn heat to medium high and add the corn to the bacon grease, stirring to coat well. Add the peppers and the butter, continue to cook, stirring so it doesn't stick for 15 minutes. Add the heavy cream and stir to get all the bits from the bottom of the pan, cook for about a minute, the cream should absorb into the corn. Remove from the heat, season with salt and pepper to taste and stir in the bacon before serving.
