1 cup canola oil
1 1/2 cups sugar
1/4 cup molasses
4 eggs
2 tbsp baking soda into
3 1/2 cups buttermilk
2 cups raisins or 1 cup each raisins & dates (or whatever!)
4 cups all purpose flour
1 1/2 cups bran

Directions:
Directions:
In a small bowl, combine oil, sugar and molasses.
Beat eggs lightly and add to mix.
In a large measuring cup, sprinkle soda into buttermilk; whisk lightly.
Pour into mix.
Put in raisins, etc.
Then mix in flour, one cup at a time.
Do not beat mix.
Put into airtight container and refrigerate for at least 24 hours. (The batter will keep for at least 2 weeks.)
Remove after 24 hours. (Do not remix!)
Spoon into muffin papers.
Cook at 425º for 20 minutes.
