4 (4 oz) sole fillets
Sea salt
Freshly ground black pepper
1/2 cup almond flour
1/2 cup butter, divided
Juice and zest of 3 lemons
1/2 cup chopped fresh parsley
1 teaspoon fresh chopped thyme

Directions:
Directions:
1. Pat the fish almost dry with paper towels, and season both sides with salt and pepper.

2. On a large plate, dredge the sole in almond flour.

3. In a large skillet over medium-high heat, heat 6 tablespoons of butter.

4. Swirl the skillet until the butter starts to foam and brown flecks appear, about 1 minute.

5. Reduce the heat to medium-low, and add the fish fillets to the skillet.

6. Fry the fish until browned on both sides, turning once, about 6 minutes total.

7. Remove the fish from the skillet, and transfer them to plates.

8. Stir in the remaining butter, lemon juice, lemon zest, parsley, and thyme.

9. Whisk over the heat for 2 minutes, and then serve the fish with the buttery sauce.
