1 small onion, chopped
1/2 cup chopped pepper
1/4 cup oven roasted tomatoes
2 minced cloves garlic
1 cup fresh spinach
4 eggs or 6-7 egg whites substitute
1 cup milk or 2% or Soy
1 cup shredded cheddar cheese
8 slices cooked crisp bacon crumbled or turkey bacon
Directions:

Whisk eggs and milk in a large bowl until well blended; stir in remaining ingredients.
Pour into 12 non-stick muffin cups.
Bake 40 minutes or until tops are puffed and lightly brown.
