1 cup (2 sticks) unsalted butter
1 cup peanut butter (creamy or chunky)
1 teaspoon vanilla extract
1 pound powdered sugar
1 cup chopped walnuts (optional)

Directions:
Prepare an 8x8" dish by lightly buttering and line with an oversized piece of parchment paper or waxed paper, so that the edges hang over the sides.
Combine butter and peanut butter in a large bowl. Cover with plastic wrap and microwave on high for 2 minutes. Stir and cook for 2 more minutes on high. Remove from microwave carefully, it will be extremely hot.
Add vanilla and sugar and mix well to combine. Add nuts if desired and continuously stir until mixture loses it's gloss and becomes hard to stir.
Spread mixture in the dish as evenly as possible and cover with excess parchment or waxed paper.

Refrigerate for until chilled, about 2 hours. Cut into 1" squares.
