3 c sugar
1/3-1/2 c cocoa
1 1/2 c milk or diluted canned cream
(I used milk)
1/4 tsp salt
2T light corn syrup
3T butter
1 tsp vanilla
1 cup chopped nuts(I did not use)

Use a heavy pot I used my LE Creuset pot 5 qt
Rub the sides and bottom with butter
Mix in separate bowl sugar and cocoa
Pour into heavy pot,add milk,corn syrup,salt
Use a wooden spoon and stir slowly,stay with pot heat should be on med
Boil slowly to soft ball stage(238)I used candy clip thermometer from dollar store
You can do the cold water test
Glass of cold water and drop spoonful of fudge in it.It should form a soft ball

Remove from heat add butter and cool down to 110
Add vanilla begin to beat with wooden spoon the fudge will loose shine and pour immediately into buttered 8x8 pan
