1 cup fine graham cracker crumbs
2 1/2 tbs sugar
2 1/2 tbs butter

Filling:
3 lbs cream cheese
2 cups sugar
6 eggs
vanilla

Directions:
Very Important! Have butter, cream cheese and eggs at room temperature! - Mix crumbs, butter and 2 1/2 tbs sugar with hands. Blend well. Press mixture onto bottom of 9" spring form pan. Mix cream cheese well, a little at a time. Slowly beat in 2 cups of sugar. Beat in eggs one at a time, beating well after each addition. Add 1 tbs vanilla. Pour into prepared pan. Bake in moderate oven 350 for 60 min or until cake is set in center. be sure to bake your cheesecake in water, by putting spring form pan into a larger pan and filling halfway with water. Cool and then chill in refrigerator. Remove rim of pan.
