2 each apples (I used McIntosh)

1 cup diced dried apricots reconstituted with hot water

2 cups cooked farro

3/4 cup chopped pecans

1 cup plain Greek yogurt

1/2 cup honey

1 lemon juiced

pinch salt

Directions:
Directions:
Peel and small dice the apples and mix with the cooked farro. Add in the pecans and mix well. Set the mixture aside. In a small mixing bowl combine the yogurt, lemon juice, and honey. Whisk in the reconstituted apricots. Dress the apple, farro, and pecan mixture with the yogurt mixture. Season with a pinch of salt if so desired.
